What is egg processing?
Canada’s egg processors remove eggs from their shell and transform them into liquid, powdered and frozen products and ready to eat items.
Most of these eggs are sold as ingredient and foodservice products, and consumers can also find them at the grocery store in various forms such as liquid, hard boiled, and egg patties.
Innovation drives sector growth
Egg processors work with their customers to develop new value-added food products containing processed egg products.
Canadian consumers have responded to this innovation by increasing their consumption of processed egg products – in 2022, Canadians consumed the equivalent of 6.3 doz eggs per capita, about 30% of total eggs consumed.
Today, the egg processing sector directly employs more than 900 Canadians in 12 plants across the country. The sector continues to invest in their plants and equipment in order to assure the efficiency and sustainability of their businesses, while also investing in innovation to meet the needs of customers.
Our work on behalf of Canada’s egg processors
CPEP represents Canada’s egg processing sector. Our egg processing member companies operate 12 plants in Canada and represent 100% of the eggs broken in Canada.
We work with Egg Farmers of Canada and CPEP egg grading sector members to meet the needs of Canada’s egg market. We identify solutions to key issues facing the sector and identify opportunities to support innovation and growth. This includes:
- Working with key stakeholders on policies impacting the sector, including processor pricing
- Ensuring measures are in place to address fluctuating market conditions
- Representing the interest of Canadian egg processors in consultations on government policies
- Ensuring that all egg supply for processors meet rigorous animal welfare standards
- Working with CFIA to address key regulatory issues
